Chocolate Buttercream Frosting

 

Sometimes you just need chocolate to smear on things.  And that's where this comes in handy!  Nice, easy, spreadable chocolate.

Honestly, this comes together in about 5 minutes.  The tricky part is sourcing the ingredients.  Most confectioner's sugar is made with corn starch.  However, there are a few brands that use tapioca starch instead.  The ones that I know about are Wholesome! and the Whole Food's brand.  There may very well be others.  But always, always, always double-check the ingredients before buying.  It's not paranoia when people are actually poisoning you constantly. 

I'm also very picky about cocoa powder because I like it to be non-alkaline in addition to all the allergy stuff and being fair trade.

Now for deliciousness!  Take your softened butter and beat it into white fluffiness!

Then dump every other ingredient in the bowl. Fold them in some so there is not an immediate explosion of powdered sugar and cocoa in your face when you start the mixer up again.

Then you shove the mixer back in there and whirl it around again!

Much more cooperative now that the butter has been beaten into submission.

Then it's ready for spreading!
 
Keep in mind that it is less sweet than store-bought frostings because I put a lot less sugar in.  It is excellent for cakes that are a bit too sweet on their own.  Like a pecan torte.  (Hint. Hint.)
